Ingredients

Scale

Beef Mixture

  • 1 pound ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup corn (frozen or canned)
  • 1 packet taco seasoning
  • 1 cup salsa

Casserole Layers

  • 8 small corn tortillas, cut into quarters
  • 1 cup shredded cheddar cheese

Optional Garnishes

  • 1/2 cup sour cream
  • Chopped cilantro

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
  2. Cook Beef Mixture: In a skillet over medium heat, brown the ground beef until fully cooked. Drain the excess fat. Stir in the taco seasoning, black beans, diced tomatoes with green chilies, and corn. Cook the mixture for about 5 minutes until heated through and well combined.
  3. Layer Tortillas: Grease a 9×13-inch casserole dish. Spread half of the quartered corn tortillas evenly on the bottom to form the first layer.
  4. Add Beef Mixture and Toppings: Over the tortilla layer, spread half of the beef mixture, followed by half the salsa and half the shredded cheddar cheese.
  5. Repeat Layers: Repeat the layering by adding the remaining tortillas, then the remaining beef mixture, salsa, and cheese on top. Finish with any cheese left on top for a cheesy crust.
  6. Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cheese is melted, bubbly, and golden brown.
  7. Serve: Remove from oven and let cool slightly. Serve warm topped with optional sour cream and chopped cilantro for extra flavor.

Notes

  • Use frozen or canned corn depending on availability.
  • For extra spice, add jalapeños or hot sauce to the beef mixture.
  • Sour cream and cilantro are optional but add freshness and creaminess.
  • This dish can be made ahead and refrigerated before baking to save time.
  • To make it gluten-free, ensure the taco seasoning and salsa are gluten-free certified.
