Chicken & Sauce Ingredients

  • 1 lb (450 g) chicken breast or thigh fillets, cut into bite-sized pieces
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tbsp olive oil
  • Salt and black pepper, to taste
  • 3 cloves garlic, minced
  • 1 tsp miso paste (optional but recommended for depth)
  • 1/2 cup sun-dried tomatoes, sliced
  • 1/2 cup roasted red peppers, chopped
  • 1 1/2 cups baby spinach leaves
  • 1 cup broccoli florets, lightly steamed
  • 1 cup heavy cream (or coconut cream for a lighter option)
  • 1/2 cup chicken broth
  • 1/4 tsp chili flakes (optional for heat)
  • 1 tsp lemon juice

For Serving

  • 2 cups cooked jasmine rice
  • 2 tbsp Greek yogurt (for garnish)
  • 1 tbsp chili oil (optional drizzle)
  • Crispy fried shallots (for topping)
  • Fresh micro herbs
  • A light dusting of smoked paprika

Instructions

  1. Prepare the chicken: Season the chicken pieces with smoked paprika, garlic powder, salt, and black pepper. Heat olive oil in a skillet over medium-high heat and sear the chicken for 5 to 7 minutes until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  2. Sauté aromatics: In the same skillet, add the minced garlic and miso paste, cooking for about 1 minute until fragrant. Then stir in the sun-dried tomatoes and chopped roasted red peppers, allowing their flavors to meld.
  3. Build the sauce: Pour the chicken broth and heavy cream into the skillet, stirring gently to combine. Let the mixture simmer for 4 to 5 minutes until the sauce thickens slightly and develops a creamy texture.
  4. Combine & finish: Return the cooked chicken pieces to the skillet, then fold in the baby spinach leaves and steamed broccoli florets. Simmer for an additional 2 to 3 minutes until the spinach wilts and all components are fully coated in the creamy garlic-paprika sauce. Stir in the lemon juice to brighten and balance the flavors.
  5. Serve: Spoon the creamy smoky chicken mixture over fluffy jasmine rice. Garnish each serving with a dollop of Greek yogurt, a drizzle of chili oil if desired, crispy fried shallots, fresh micro herbs, and a light dusting of smoked paprika to achieve a restaurant-quality presentation.

Notes

  • Miso paste adds depth and umami but can be omitted for a milder flavor.
  • For a dairy-free option, substitute heavy cream with coconut cream.
  • Lightly steaming broccoli before adding prevents it from becoming soggy in the sauce.
  • Chili flakes and chili oil add heat; adjust according to your spice preference.
  • Serve immediately for best texture and flavor.
