Tips & Variations

  • For extra flavor, try adding a small walnut or pecan piece on top before baking.
  • If you can’t find Athens Phyllo Shells, mini tart shells or wonton wrappers work well as a substitute.
  • Use fresh thyme or swap for rosemary for a different herb note.

Storage

Store leftover brie bites in an airtight container in the refrigerator for up to 2 days. Reheat gently in a 325°F oven for 5-7 minutes to soften the cheese without drying out the shells. They are best enjoyed fresh for optimal crispness.

FAQs

Can I prepare these brie bites ahead of time?

Yes, you can assemble the bites up to step 7, then cover and refrigerate for a few hours before baking. Bake just before serving for the best texture.

What can I use if I don’t have fresh thyme?

Dried thyme can be used in a pinch; just sprinkle a smaller amount since dried herbs are more concentrated. Alternatively, fresh rosemary or sage can add a lovely flavor twist.
