  • 200 g Greek yogurt
  • 60 g granulated sugar
  • 3 large eggs (room temperature)
  • 20 g all-purpose flour
  • 30 ml vegetable oil
  • 18 g cornstarch
  • 15 ml honey
  • 1 tsp fresh lemon juice
  • a pinch of salt

Instructions

  1. Preheat and Prepare: Preheat oven to 150°C (300°F). Line a 16cm (6-inch) baking pan with parchment paper and wrap in foil.
  2. Separate Eggs: Separate 3 eggs into yolks and whites.
  3. Prepare Batter: Whisk yolks with oil, yogurt, and honey. Add flour and cornstarch, then lemon juice and salt.
  4. Beat Egg Whites: Beat egg whites with sugar until medium peaks form.
  5. Combine Batter: Gently fold egg whites into batter.
  6. Bake: Pour batter into pan, bake in a water bath for 50 minutes.
  7. Cool and Serve: Cool cake, remove from pan, slice, and enjoy!
