Ingredients

  • 1 lb Flank steak (450g)
  • 2 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Smoked paprika
  • Salt, to taste
  • Pepper, to taste
  • 1 cup Fresh corn kernels (or canned corn, drained)
  • 1 medium Red bell pepper, diced
  • 1/4 cup Red onion, finely chopped
  • 1/4 cup Fresh cilantro, chopped
  • 1 Lime, juiced
  • 1/2 cup Greek yogurt
  • 2 tablespoons Mayonnaise
  • 2 cloves Garlic, minced
  • 1 tablespoon Lemon juice
  • 2 ripe Avocados, sliced
  • 2 Large eggs
  • Cooked rice or quinoa, to serve
  • Lime wedges, for garnish

Instructions

  1. Step 1: In a bowl, combine olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Rub the mixture all over the flank steak and let it marinate for at least 30 minutes.
  2. Step 2: In a mixing bowl, combine corn, diced red bell pepper, red onion, cilantro, lime juice, salt, and pepper. Mix well and set aside.
  3. Step 3: In a small bowl, whisk together Greek yogurt, mayonnaise, minced garlic, lemon juice, salt, and pepper until smooth. Adjust seasoning to taste and set aside.
  4. Step 4: Preheat the grill to medium-high heat. Grill the marinated flank steak for about 5-7 minutes on each side or until it reaches your desired doneness. Let it rest for 5 minutes before slicing thinly against the grain.
  5. Step 5: In a small pot, bring water to a boil. Gently add the eggs and boil for 6-7 minutes for soft-boiled eggs. Remove, cool under cold water, peel, and set aside.
  6. Step 6: In serving bowls, layer cooked rice or quinoa, sliced grilled steak, avocado slices, corn salsa, and halved soft-boiled eggs. Drizzle with creamy garlic sauce.
  7. Step 7: Serve immediately with lime wedges on the side for an extra zest.

Tips & Variations

  • For extra smoky flavor, try adding a pinch of chipotle powder to the steak marinade.
  • Use quinoa instead of rice for a protein boost and nuttier taste.
  • Swap soft-boiled eggs for poached eggs if preferred.
  • Add sliced jalapeños to the corn salsa for a spicy kick.

Storage

Store leftover components separately in airtight containers in the refrigerator for up to 2 days. Reheat the steak slices gently in a skillet or microwave. Keep avocado slices fresh by squeezing a bit of lime juice over them to prevent browning before storing.

How to Serve

A round black bowl contains a visually rich dish with four main layers; at the bottom is a creamy light brown sauce filling the base of the bowl. On one side, there are five thick slices of dark grilled meat with charred edges, each slice drizzled with the same brown sauce and sprinkled with finely chopped green herbs. Next to the meat, three fresh green avocado slices are neatly arranged, sprinkled with black pepper. At the top of the bowl, a sunny-side-up egg with a bright yellow yolk and a white cooked edge is garnished with green herbs. The bowl is held by a woman's hand against a blurred colorful city background, and the surface underneath the bowl is a white marbled texture. photo taken with an iphone --ar 4:5 --v 7

Other Ingredients

  • 2 ripe Avocados, sliced
  • 2 Large eggs
  • Cooked rice or quinoa, to serve
  • Lime wedges, for garnish

Instructions

  1. Marinate the Steak: In a bowl, combine olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Rub the mixture all over the flank steak thoroughly. Let the steak marinate for at least 30 minutes to absorb all the flavors.
  2. Prepare the Corn Salsa: In a mixing bowl, combine fresh corn kernels, diced red bell pepper, finely chopped red onion, chopped cilantro, lime juice, salt, and pepper. Mix well and set aside to allow flavors to meld.
  3. Make the Creamy Garlic Sauce: In a small bowl, whisk together Greek yogurt, mayonnaise, minced garlic, lemon juice, salt, and pepper until smooth. Taste and adjust seasoning if needed. Set aside.
  4. Grill the Steak: Preheat the grill to medium-high heat. Place the marinated flank steak on the grill and cook for about 5-7 minutes on each side or until it reaches your preferred doneness. Remove the steak and let it rest for 5 minutes before slicing thinly against the grain to keep it tender.
  5. Prepare Soft-Boiled Eggs: Bring a small pot of water to a boil. Gently add the eggs and boil for 6-7 minutes for a soft-boiled center. Remove the eggs from boiling water, cool immediately in cold water, peel, and set aside.
  6. Assemble the Bowls: In serving bowls, place a layer of cooked rice or quinoa. Top with sliced grilled steak, avocado slices, corn salsa, and halved soft-boiled eggs. Drizzle generously with the creamy garlic sauce.
  7. Serve: Garnish with lime wedges and serve immediately for a fresh and satisfying meal.

Notes

  • Marinate the steak longer for deeper flavor—up to 2 hours or overnight in the fridge.
  • If you don’t have a grill, a grill pan or cast-iron skillet on the stovetop works well.
  • Use canned corn if fresh corn is out of season; drain well to avoid sogginess.
  • Adjust the cooking time of eggs depending on your preferred yolk consistency.
  • For a lighter option, use low-fat Greek yogurt and reduce mayonnaise.
  • Serve with quinoa for a higher protein and gluten-free alternative to rice.
