  • 4 slices Center Cut Bacon
  • 1 pound (raw) Turkey Breakfast Sausage

Vegetables

  • 1 White Onion, finely diced
  • 1 Poblano or Bell Pepper, finely diced
  • 2 cloves Garlic, minced or grated

Liquids and Seasonings

  • 1 packet Chili Seasoning
  • 28 oz can Fire Roasted Crushed Tomatoes
  • 34 cups Beef Broth, to desired consistency

Instructions

  1. Cook the Bacon: Add the bacon to a Dutch oven or soup pot over medium heat. Cook the bacon fully until crispy, then transfer it to a paper towel-lined plate to drain, preserving the bacon grease in the pot.
  2. Sauté Vegetables: Add the finely diced onion and poblano or bell pepper to the remaining bacon grease. Cook for 2-3 minutes until softened. Then add the minced garlic and cook for 30-60 seconds until fragrant.
  3. Cook the Sausage: Add the raw turkey breakfast sausage to the pot. Break it apart with a spoon or spatula and cook thoroughly until no longer pink.
  4. Add Remaining Ingredients: Stir in the packet of chili seasoning, fire-roasted crushed tomatoes, and 3 to 4 cups of beef broth (adjust amount for desired chili thickness). Chop or crumble the cooked bacon and add it back to the pot. Bring the mixture to a boil.
  5. Simmer the Chili: Once boiling, reduce the heat to low and cover the pot. Allow the chili to simmer gently for 45-60 minutes, stirring occasionally to meld flavors.
  6. Serve: Ladle the chili into bowls and serve hot, optionally topped with eggs cooked to your preference or garnished with cheese, fresh herbs, or avocado for extra richness.
