Onion:

Worcestershire Sauce:

Dried Parsley Flakes:

  • 2 tsp

Dried Oregano:

  • 4 tsp

Dried Basil Leaves:

  • 2 tsp

Dried Italian Seasoning:

  • 2 tsp

Canning Salt:

  • 4 tsp

Minced Garlic:

  • 3 tsp

Lemon Juice:

  • 1 Tablespoon for each jar

Instructions

  1. Rinse the fresh tomatoes and peppers: Make sure they are clean.
  2. Cut up the tomatoes and peppers: Place in a baking pan and broil or roast.
  3. Chop up the tomatoes, peppers, and onion: Use a food processor and add to a large pot or roasting pan.
  4. Add the remaining ingredients: Including Worcestershire sauce, dried herbs, salt, and garlic.
  5. Bring to a boil and simmer: Cook until desired thickness is achieved.
  6. Ladle the sauce into canning jars.
  7. Add Lemon Juice: 1 tablespoon to each pint jar, 2 tablespoons for quarts.
  8. Prepare jars for canning: Wipe rims, remove air bubbles, and seal with lids.
  9. Process in a water bath canner: Boil for 20 minutes for pints, 25 minutes for quarts.
  10. Allow jars to cool: Do not disturb for 24 hours.
