Ingredients

Scale

Chicken and Cooking

  • 2 tablespoons olive oil (or avocado oil)
  • 1.5 pounds boneless skinless chicken breast (cut into 1″ cubes)
  • 2 teaspoons garlic salt (or salt, divided)
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh minced garlic

Sauce

  • 1 13.66 ounce can full-fat unsweetened canned coconut cream (chilled; solid part only)
  • 1 cup chicken broth
  • 1/4 cup nutritional yeast
  • 1 teaspoon dried oregano
  • 12 tablespoons arrowroot or potato starch
  • 1 8-ounce jar sun-dried tomatoes (drained, blotted dry, and chopped, about 1/3 cup chopped)
  • 0.5 ounces fresh basil (optional but recommended)

Instructions

  1. Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Once hot, add the cubed chicken breasts, sprinkle with 1 teaspoon salt and 1/2 teaspoon black pepper. Cook for about 5-7 minutes until the chicken is golden brown and thoroughly cooked. In the last minute, add the minced garlic and cook until fragrant.
  2. Prepare the Sauce Mixture: While the chicken cooks, whisk together chicken broth, nutritional yeast, dried oregano, the remaining 1 teaspoon salt, and 1 tablespoon of starch in a medium mixing bowl until smooth.
  3. Prepare the Sun-Dried Tomatoes: Drain the sun-dried tomatoes, blot them dry to remove excess oil, and finely chop to your preference. Removing oil prevents the final dish from becoming greasy.
  4. Add Sun-Dried Tomatoes and Coconut Cream: Once the chicken is cooked, add the chopped sun-dried tomatoes to the skillet and stir to combine. Then add only the white solid portion of the chilled coconut cream (reserve the opaque liquid for other uses), stirring until it melts into the pan. Pour in the prepared chicken broth sauce mixture.
  5. Simmer and Thicken the Sauce: Bring the sauce to a boil, then reduce heat and simmer for about 5 minutes until thickened. For thicker sauce, mix an additional tablespoon of starch with 1 tablespoon broth and stir in immediately. For thinner sauce, add 1/4 to 1/2 cup extra chicken broth and simmer until desired consistency is reached.
  6. Season and Serve: Adjust seasoning with additional salt if needed. Garnish with fresh basil if using. Serve your Marry Me Chicken with steamed cauliflower rice or your favorite vegetables for a wholesome Whole30-compliant meal.

Notes

  • Use the solid part of chilled coconut cream only; reserve the liquid for smoothies or other recipes.
  • Blotting the sun-dried tomatoes dry is essential to avoid oily sauce.
  • Arrowroot or potato starch can be used interchangeably for thickening, but adjust quantity as needed for preferred sauce consistency.
  • Fresh basil adds brightness but can be omitted if unavailable.
  • This recipe is Whole30 compliant and suitable for paleo, gluten-free, and dairy-free diets.
