Ingredients

Scale

Sausage and Aromatics

  • 1 lb Italian sausage
  • 1 onion, chopped
  • 3 cloves garlic, minced

Broth and Beans

  • 6 cups chicken broth
  • 1 (15 oz) can white beans, drained and rinsed

Dairy and Greens

  • 1 cup heavy cream
  • 2 cups spinach, chopped
  • 1 1/2 cups ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated

Pasta and Seasoning

  • 8 oz lasagna noodles, broken into pieces
  • Salt and pepper to taste

Instructions

  1. Cook the sausage: In a large pot over medium heat, brown the Italian sausage, breaking it apart with a spoon until fully cooked. Remove the browned sausage from the pot and set it aside.
  2. Sauté aromatics: In the same pot, add the chopped onion and minced garlic and cook until softened and fragrant, about 3 minutes.
  3. Add broth and beans: Pour in the chicken broth and add the drained white beans. Bring the mixture to a boil, then reduce heat to a simmer.
  4. Incorporate dairy and greens: Stir in the heavy cream, chopped spinach, ricotta cheese, shredded mozzarella, and grated Parmesan. Let the soup simmer gently for about 5 minutes, stirring occasionally to combine all ingredients well.
  5. Cook the noodles: Add the broken lasagna noodles to the pot and simmer until the pasta is tender, about 10 minutes.
  6. Return sausage and season: Add the cooked sausage back to the soup, cook for an additional 5 minutes to heat through. Season with salt and pepper according to taste.
  7. Serve: Ladle the hot soup into bowls and garnish with extra Parmesan cheese if desired. Enjoy immediately.

Notes

  • For a lighter version, substitute half-and-half or whole milk for the heavy cream.
  • Feel free to use turkey sausage as a leaner alternative to Italian sausage.
  • If you prefer, fresh lasagna noodles can be used but reduce cooking time accordingly.
  • Spinach can be swapped for kale or Swiss chard for a different leafy green flavor.
  • Leftover soup stores well in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently on the stovetop or microwave, adding a splash of broth if the soup thickens too much.
