Ingredients

Scale

Meat and Veggies

  • 1 pound ground beef
  • 1 small onion, chopped finely

Seasoning and Liquids

  • 1 package taco seasoning
  • ½ cup water

Beans and Tomatoes

  • 1 can black beans (15 ounces), drained and rinsed
  • 1 can diced tomatoes with green chiles (10 ounces)

Dairy

  • ½ cup sour cream
  • 2 cups Mexican-style shredded cheese

Base and Toppings

  • 1 bag Fritos corn chips (9.25 ounces)
  • Green onions, sliced
  • Additional sour cream for serving
  • Guacamole for serving
  • Salsa for serving
  • Jalapeños for serving

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees F and spray a 13×9 inch baking dish with nonstick cooking spray to prepare for the casserole.
  2. Cook Ground Beef and Onions: In a large skillet, brown the ground beef until it is almost cooked through. Add the finely chopped onions and continue cooking until the onions are soft and the beef is fully cooked with no pink remaining.
  3. Add Taco Seasoning: Stir in the taco seasoning packet along with ½ cup of water, bringing the mixture to a boil to combine the flavors.
  4. Combine Beans and Tomatoes: Reduce heat to low, then stir in the drained black beans, diced tomatoes with green chiles, and ½ cup of sour cream. Cook this mixture for 8-10 minutes, stirring occasionally, until it’s heated through and slightly thickened.
  5. Layer the Casserole: Place a single layer of Fritos corn chips at the bottom of the prepared baking dish. Sprinkle 1 cup of shredded Mexican cheese over the chips, then add the beef and bean mixture on top. Finish with the remaining 1 cup of shredded cheese spread evenly over the top.
  6. Bake Covered: Cover the casserole dish with foil and bake in the preheated oven for 15 minutes to allow the flavors to meld and the cheese to melt beneath the foil.
  7. Bake Uncovered: Remove the foil and continue baking for an additional 5 minutes, or until the cheese on top is fully melted and the casserole is bubbly around the edges.
  8. Add Toppings and Serve: Remove the casserole from the oven and top with more Fritos corn chips along with sliced green onions, jalapeños, sour cream, guacamole, and salsa as desired. Serve hot and enjoy this flavorful, easy-to-make dish!

Notes

  • For a spicier casserole, add diced jalapeños into the beef mixture before baking.
  • Use fat-free or low-fat sour cream to reduce calories if desired.
  • Leftovers keep well in the refrigerator for up to 3 days and can be reheated in the oven or microwave.
  • To make this recipe vegetarian, substitute the ground beef with a plant-based meat alternative or extra beans and vegetables.
  • If you prefer a crispy top, add crushed Fritos on top after baking and briefly broil for 1-2 minutes, watching closely to avoid burning.
