Delicious and nutritious veggie rice balls make a perfect snack or side dish. These crispy-on-the-outside, tender-on-the-inside rice balls are packed with steamed veggies and cheesy goodness.

Steamed Broccoli:

Whole Egg, lightly beaten:

Freshly Grated White Cheddar Cheese:

  • 1/2 cup

Garlic Powder:

  • 1/2 teaspoon

Salt:

  • 1 teaspoon

Freshly Cracked Black Pepper:

  • To taste

Cooked White Rice:

  • 2 cups

Instructions

  1. Preheat Oven: Preheat your oven to 350°F and line a large baking sheet with parchment paper; set aside.
  2. Mash Veggies: In a bowl, mash steamed carrot and broccoli until small chunks remain.
  3. Add Ingredients: Mix in egg, cheese, garlic powder, salt, and pepper until well combined.
  4. Combine with Rice: Add cooked rice and mix thoroughly with the vegetable mixture.
  5. Form Balls: Shape small portions into balls and place them on the baking sheet.
  6. Bake: Bake for 25-27 minutes until golden brown.

Notes
