Ingredients

Scale

Vegetables

  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 stalks celery, sliced
  • 2 cloves garlic, minced
  • 1 zucchini, chopped
  • 1 cup peas

Liquids and Seasonings

  • 1 tbsp olive oil
  • 4 cups vegetable broth
  • 1 can (15 oz) diced tomatoes
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat oil and sauté vegetables: Heat the olive oil in a large pot over medium heat. Add the chopped onion, sliced carrots, and celery. Cook, stirring occasionally, until the vegetables are softened, about 5-7 minutes.
  2. Add garlic and liquids: Stir in the minced garlic and cook for 1 minute until fragrant. Then pour in the vegetable broth, diced tomatoes with their juice, chopped zucchini, and peas.
  3. Season and simmer: Add the dried thyme along with salt and pepper to taste. Bring the mixture to a boil.
  4. Cook the soup: Once boiling, reduce the heat to low and let the soup simmer uncovered for 20-25 minutes until all vegetables are tender and flavors meld together.
  5. Serve and enjoy: Taste and adjust seasoning if needed. Serve hot as a comforting, nutritious soup perfect for any meal.

Notes

  • You can use fresh or frozen peas based on availability.
  • Feel free to substitute thyme with other herbs like rosemary or basil for variation.
  • This soup stores well in the refrigerator for up to 4 days and tastes great reheated.
  • Add a squeeze of lemon juice at the end for a bright flavor boost.
  • For a creamier texture, blend a portion of the soup before serving.
