  • 2 cups cooked white rice, cold (made from 1 cup uncooked rice with 1 Tbsp butter & 1/4 tsp salt)
  • 1 tsp sesame oil (optional but highly recommended)

Garnish

  • 2 Tbsp green onions, chopped
  • 1 Tbsp sesame seeds (optional)

Instructions

  1. Cook the Rice: Rinse the uncooked rice thoroughly and cook it according to package instructions. For best results, use a rice maker and add 1 Tbsp butter and 1/4 tsp salt. Once cooked, let the rice cool completely. This recipe works best with cold, leftover rice to avoid sticky fried rice.
  2. Prepare Vegetables: Dice the onion, red bell pepper, and pineapple, and mince the garlic. Grate the ginger ahead of time for easy cooking.
  3. Cook the Vegetables: Heat a heavy-bottomed skillet or wok over medium heat and add 2 Tbsp oil. Toss in the diced onion and cook for about 1 minute, or until softened. Add the minced garlic and grated ginger, and cook for another minute, stirring constantly to release their flavors.
  4. Add Pineapple and Bell Pepper: Increase the heat to medium-high, and add the diced bell pepper and pineapple to the skillet. Continue to sauté for 3-5 minutes until everything turns golden brown, stirring frequently to ensure even cooking.
  5. Combine Rice and Soy Sauce: Add the cold, cooked rice and soy sauce to the skillet. Stir everything together and let it cook for an additional minute, allowing the soy sauce to be well incorporated.
  6. Finish the Dish: Turn off the heat and stir in the sesame oil for an authentic Asian flavor (optional).
  7. Garnish and Serve: Plate the pineapple fried rice, and sprinkle with chopped green onions and sesame seeds for added texture and flavor. Serve warm and enjoy!
