Onion, chopped:

Garlic, minced:

2 cloves

Potatoes, diced:

3 cups

Carrots, diced:

2 cups

Celery, diced:

1 cup

Corn Kernels (fresh or frozen):

1 cup

Diced Tomatoes (undrained):

1 can (14.5 oz)

Beef Broth:

1 cup

Cheddar Cheese, shredded:

1 cup

Salt:

1 tsp

Black Pepper:

1/2 tsp

Dried Thyme:

1 tsp

Dried Rosemary:

1 tsp

Olive Oil:

1 tbsp

Instructions

  1. Preheat Oven: Preheat the oven to 375°F (190°C).
  2. Cook Ground Beef: Brown the ground beef in a skillet, then set it aside.
  3. Sauté Onion and Garlic: Cook chopped onion and minced garlic until translucent.
  4. Add Vegetables: Cook potatoes, carrots, and celery in the skillet.
  5. Combine Ingredients: Mix in corn, cooked beef, diced tomatoes, and beef broth. Season with salt, pepper, thyme, and rosemary.
  6. Bake: Transfer the mixture to a baking dish, cover, and bake for 30 minutes. Uncover, top with cheese, and bake until bubbly.
  7. Rest and Serve: Allow the bake to rest briefly before serving.
