Potatoes:
- 3 lbs Idaho potatoes (peeled or not)
Seasonings:
- 1 bay leaf
- 1 tsp dried dill weed
- Salt to taste
- 1 tsp garlic powder
- 1 tsp kosher coarse or sea salt (to taste)
- 1/4–1/2 tsp black pepper (to taste)
Additional:
- 3 tbsp unsalted butter
- 1/4 cup heavy whipping cream
- 1/4–1/2 cups cooking water from above cooking potatoes
- 3 tbsp sour cream (optional)
- Prepare Potatoes: Peel and cut potatoes into 1-inch chunks. Place in a pot with enough cold water to cover.
- Add Seasonings: Add bay leaf, salt, dill weed, half the black pepper. Bring to a boil, then simmer until potatoes are tender.
- Drain Potatoes: Reserve 1/2 cup of cooking water. Drain potatoes.
- Mash Potatoes: Return potatoes to the pot. Add butter, cream, sour cream, garlic powder, remaining seasonings, and some cooking water. Mash until smooth.
- Adjust Consistency: Add more cooking water if needed for desired consistency. Mash until smooth.
- Season and Serve: Adjust salt to taste. Serve hot, topped with butter.

- You can leave the potato skins on for added texture and nutrients.
- For extra richness, more butter or cream can be added.
