This Veggie Pizza recipe is a delicious and colorful twist on traditional pizza. A flavorful garden vegetable cream cheese base topped with a medley of fresh vegetables and cheese, all on a crispy crust. Perfect for a light meal or as a party appetizer.

Pizza Crust:

  • 13.8 ounce tube refrigerated pizza crust
  • 2 Tablespoons light olive oil

Toppings:

  • 2 (7.5 ounce) tubs garden vegetable cream cheese
  • Salt, pepper, and garlic powder, to taste (about a teaspoon each)
  • 1 cup chopped broccoli florets
  • 1 cup chopped cauliflower florets
  • 1 cup shredded carrots
  • 1 cup shredded colby jack cheese
  • 1/2 cup diced bell peppers (red, green, yellow or a combination)
  • 1/2 cup diced tomatoes
  • 1/2 cup sliced olives
  • 1/4 cup sliced green onion

Instructions

  1. Preheat the oven: Preheat the oven to 425F degrees. Spray a large sheet pan (10”x 15”) with nonstick spray.
  2. Prepare the crust: Unroll the pizza crust onto the sheet pan, spread it out, poke with a fork, and brush with olive oil. Bake until lightly golden brown.
  3. Cool the crust: Allow the crust to cool completely for about 30 minutes.
  4. Add cream cheese: Spread the vegetable cream cheese evenly on the crust, sprinkle with salt, pepper, and garlic powder.
  5. Add toppings: Top with chopped vegetables and shredded cheese.
  6. Serve: Slice into twelve slices and serve. Refrigerate any leftovers.
  7. Make ahead: Can be prepared 24 hours in advance. Refrigerate and slice before serving.
