For the Popcorn:

- 1/4 cup (57g) refined coconut oil
- 1 cup (210g) popcorn kernels
For the Caramel Sauce:
- 1 and 1/4 cups (270g) light brown sugar, packed
- 2/3 cup (208ml) light corn syrup
- 3/4 cup (170g) unsalted butter
- 1 teaspoon salt
- 1 teaspoon vanilla extract
- 3/4 teaspoon baking soda
- Preheat Oven: Preheat the oven to 250°F (120°C). Line a large rimmed baking sheet with parchment paper and lightly spray with nonstick cooking spray. Set aside.
- Pop the Popcorn: In a large, heavy pot over medium-high heat, warm the coconut oil until it shimmers. Add the popcorn kernels and partially cover the pot with a lid. Once the kernels begin to pop, reduce the heat to medium and cover the pot completely. Shake the pot every 30 seconds, ensuring the kernels pop evenly. When the popping slows to a few seconds between pops, remove the pot from the heat. Set aside.
- Make the Caramel Sauce: In a medium saucepan, combine the brown sugar, corn syrup, butter, and salt. Cook over medium heat, stirring frequently, until the butter is completely melted and the mixture is smooth. Stir in the vanilla extract and baking soda. The mixture may bubble up when you add the baking soda, so be cautious. Remove the pan from the heat.
- Coat the Popcorn: Pour the caramel sauce over the popped popcorn and stir gently to coat the popcorn evenly. Be sure to coat all of the popcorn thoroughly.
- Bake: Quickly spread the caramel-coated popcorn onto the prepared baking sheet. Bake in the preheated oven for 1 hour, stirring every 15 minutes to ensure even coating.
