Instructions

  1. Boil the eggs: Prepare hard-boiled eggs using your preferred method—boiling on the stovetop, steaming, or using an Instant Pot. Once cooked, cool the eggs and carefully peel off the shells.
  2. Slice eggs in half: Using a sharp knife, slice each egg in half lengthwise. Handle gently to keep the whites intact.
  3. Remove yolks: Instead of scooping with a spoon, gently push the back of each egg white half to pop out the yolk without tearing the egg white.
  4. Prepare filling: In a medium mixing bowl, combine the egg yolks, mayonnaise, Dijon mustard, fresh lemon juice, crème fraîche (or soft cream cheese or sour cream), sea salt, black pepper, and smoked paprika. Use a hand mixer to blend until smooth and creamy.
  5. Fill egg whites: Transfer the yolk mixture into a large zip-top bag or piping bag fitted with a large star tip. Pipe the filling neatly back into the hollowed egg whites for a decorative presentation.
