Chicken Soup:

  • 1 lb chicken breast, diced
  • 4 cups chicken broth
  • 1 can (14 oz) coconut milk
  • 1 stalk lemongrass, smashed
  • 2 inches fresh ginger, sliced
  • 1 red bell pepper, sliced
  • 1 cup mushrooms, sliced
  • 2 tbsp fish sauce
  • Juice of 1 lime

Garnish:

  • Fresh cilantro for garnish

Instructions

  1. In a large pot, combine chicken broth, coconut milk, lemongrass, and ginger. Bring to a simmer. Simmer for about 10 minutes to allow the flavors to meld.
  2. Add the chicken, bell pepper, and mushrooms. Cook until the chicken is no longer pink, about 15 minutes.
  3. Stir in fish sauce and lime juice. Taste and adjust seasoning if needed.
