Chicken Soup:
- 1 lb chicken breast, diced
- 4 cups chicken broth
- 1 can (14 oz) coconut milk
- 1 stalk lemongrass, smashed
- 2 inches fresh ginger, sliced
- 1 red bell pepper, sliced
- 1 cup mushrooms, sliced
- 2 tbsp fish sauce
- Juice of 1 lime
Garnish:
- Fresh cilantro for garnish
- In a large pot, combine chicken broth, coconut milk, lemongrass, and ginger. Bring to a simmer. Simmer for about 10 minutes to allow the flavors to meld.
- Add the chicken, bell pepper, and mushrooms. Cook until the chicken is no longer pink, about 15 minutes.
