Ingredients

Scale

Main Ingredients

  • 1 pound lean ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup corn
  • 1 packet taco seasoning
  • 10 ounce diced tomatoes with green chiles
  • 8 ounce tomato sauce
  • 5 hamburger buns
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Brown the beef and onion: In a large skillet over medium heat, cook the ground beef and finely chopped onion, breaking up the meat as it cooks. Continue cooking for 5-7 minutes or until the beef is fully browned and the onions have softened. Drain any excess fat from the pan to reduce greasiness.
  2. Add garlic: Stir in the minced garlic and cook for an additional 1 minute until fragrant, making sure not to burn the garlic.
  3. Mix in corn and taco seasoning: Add the corn kernels and taco seasoning packet to the skillet. Stir well to evenly combine all the ingredients.
  4. Simmer with tomatoes and sauce: Pour in the diced tomatoes with green chiles and tomato sauce. Stir together and bring the mixture to a simmer. Let it cook for 5 minutes to allow the flavors to meld. Season with salt and pepper to taste.
  5. Serve: Spoon the taco sloppy joe mixture onto the hamburger buns. Top each with shredded cheddar cheese and serve warm.

Notes

  • For a spicier version, add a pinch of cayenne pepper or chopped jalapeños when adding the taco seasoning.
  • Use lean ground turkey or chicken as a lighter alternative to beef.
  • Top with additional favorite taco toppings like sliced avocado, sour cream, or chopped cilantro for extra flavor.
  • To melt the cheese better, place assembled sloppy joes briefly under a broiler or cover the skillet with a lid for a couple of minutes.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
