Pitted Dates:

  • 1 ½ cups pitted dates (*soak them in hot water for 10 minutes)

Instructions

  1. Set the oven: Preheat the oven to 350°F and line a cookie sheet with parchment paper.
  2. Process oats: In a food processor, grind the oats into a fine flour-like consistency.
  3. Add peanut butter and dates: Add the peanut butter and soaked dates to the food processor. Process until the mixture forms a dough that sticks together.
  4. Shape the dough: Roll the dough into tablespoon-sized balls and flatten them into cookie shapes on the prepared cookie sheet.
  5. Bake: Bake the cookies for 10-12 minutes, rotating the sheet halfway through baking. The bottoms should turn brown.
