These Strawberry Shortcake Cookies are a delightful twist on a classic dessert. Soft and chewy cookies filled with fresh strawberries and white chocolate, topped with a sweet glaze.

Dry Ingredients:

  • 2½ cups all-purpose baking mix
  • 1/2 cup granulated sugar

Wet Ingredients:

  • 1/2 cup half and half
  • 4 tablespoons salted butter (melted)
  • 1 cup chopped strawberries
  • 1 cup white chocolate chips
  • coarse raw cane sugar (optional)
  • 1 cup powdered sugar
  • 12 tablespoons half and half

Instructions

  1. Preheat the oven: Preheat the oven to 425℉. Line two cookie sheets with parchment paper and set aside.
  2. Mix Dry Ingredients: In a large mixing bowl, whisk together the baking mix and sugar.
  3. Add Wet Ingredients: Add the half and half and melted butter. Stir until a soft dough forms.
  4. Stir in Mix-Ins: Gently fold in the chopped strawberries and white chocolate chips.
  5. Scoop and Bake: Use a cookie scoop to portion out the dough onto the prepared sheets. Sprinkle with raw cane sugar and bake.
  6. Cool and Glaze: Let the cookies cool slightly before drizzling with glaze made from powdered sugar and half and half.

Notes

  • Be gentle when mixing in the strawberries to prevent color bleed.
