  • 3 eggs, (slightly beaten)

  • 4 cups fresh strawberries, (cut in half)
  • 1 tablespoon fresh-squeezed lemon juice
  • 1 tablespoon cornstarch
  • ¾ cup sugar

Instructions

  1. Preheat the oven: Preheat the oven to 350°F. Line a 9×13 baking dish with parchment paper, leaving an overhang for easy removal.
  2. Mix the crust: In a stand mixer, combine flour, sugar, salt, and lemon zest. Mix on low speed until combined.
  3. Add butter: Incorporate the cold, cubed butter until pea-sized pieces form.
  4. Combine eggs: Mix in the beaten eggs until a crumbly dough forms.
  5. Prepare the base: Press ⅔ of the dough into the bottom of the dish to form the crust.
  6. Make the filling: In a bowl, mix strawberries, lemon juice, cornstarch, and sugar.
