Strawberry Filling
- 3 cups frozen or fresh strawberries
- 3 tbsp brown sugar (packed)
- 2 tsp lemon juice
- 1 tbsp + 1 tsp cornstarch
- 2 tbsp water
Tangzhong
- ¼ cup all-purpose flour
- ¾ cup water
Cinnamon Roll Dough
- 3 ½ cups all-purpose flour (*see notes for measuring below*)
- ⅓ cup granulated sugar
- 2 tsp instant yeast
- 3/4 tsp fine sea salt
- ½ cup whole milk (room temperature)
- 1 large egg (room temperature)
- 1 tsp vanilla extract
- Tangzhong (from recipe above)
- 4 tbsp unsalted butter (softened)
Glaze
- 1 ounce cream cheese (room temperature)
- 4 tbsp unsalted butter (room temperature)
- 1 cup powdered sugar
- 1–2 tbsp reserved strawberry filling
- 1 tbsp whole milk
- Strawberry Filling – Cook the strawberries, brown sugar, and lemon juice over medium-high heat for 20 minutes, stirring occasionally. Mash the berries as they cook, then add cornstarch mixture and cook until thickened.
- Tangzhong – Whisk flour and water in a saucepan, cook until paste-like. Set aside.
- Cinnamon Roll Dough – Mix dry ingredients, add wet ingredients and tangzhong. Knead, then add butter. Let rise, roll out, fill with strawberry jam, cut, roll, and bake.
- Glaze – Mix butter, cream cheese, powdered sugar, milk, and reserved jam. Spread over baked rolls.

- Ensure the milk and egg are at room temperature for best results.
- Adjust sugar in the filling to taste depending on the sweetness of the strawberries.
- For accurate measuring of flour, spoon it lightly into measuring cups and level off with a knife.
