Strawberry Layer

  • 2 tablespoons gelatin
  • 1/2 cup water

Cream Layer

  • 1/2 cup yogurt

Instructions

  1. Cook and puree strawberries: In a small saucepan, cook sliced strawberries and lemon juice over medium heat until the berries are softened and cooked through. Add honey and blend the mixture thoroughly using an immersion blender to create a smooth strawberry puree.
  2. Bloom gelatin: In a small bowl, sprinkle gelatin over 1/2 cup of water and whisk quickly to combine. Set aside to let the gelatin absorb the water.
  3. Strain puree and dissolve gelatin: Strain the strawberry puree through a fine sieve to remove seeds. Return the strained puree to the pot and heat gently on low. Add the bloomed gelatin and stir well until fully dissolved, then remove from heat.
  4. Prepare first strawberry layer: Pour roughly two-thirds of the strawberry gelatin mixture evenly into 4 serving cups. Place the cups in the refrigerator to start setting the first layer.
  5. Make yogurt layer: Transfer half of the remaining strawberry gelatin mixture into a small bowl. Stir in the yogurt until fully combined to form the creamy middle layer. Spoon this mixture evenly over the chilled strawberry layer in each cup. Return the cups to the refrigerator.
  6. Add final strawberry layer: Pour the remaining strawberry gelatin mixture over the yogurt layer, creating three distinct layers. Refrigerate the cups for at least 30 minutes more until the gelatin is set completely.
