Ingredients

Scale

Rice Base

  • 2 cups sushi rice (uncooked)
  • 2.5 cups water
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt

Salmon Topping

  • 1 lb fresh salmon fillet (skinless and diced)
  • 1/2 cup mayonnaise
  • 2 tablespoons Sriracha sauce (or to taste)
  • 1 teaspoon sesame oil
  • 1/2 cup green onions (chopped, plus extra for garnish)

Garnish

  • 1 sheet nori (cut into small strips)
  • Tobiko (to taste, optional)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the sushi bake.
  2. Cook Sushi Rice: Rinse the sushi rice under cold water until the water runs clear. Combine the rice with 2.5 cups of water in a rice cooker or pot. Cook until tender and water is absorbed.
  3. Season the Rice: In a small bowl, mix rice vinegar, sugar, and salt until the sugar dissolves. Once rice is cooked, fluff it with a fork and gently fold in the vinegar mixture evenly throughout the rice.
  4. Layer Rice: Spread the seasoned sushi rice evenly at the bottom of a baking dish. Allow it to cool slightly to prevent the salmon mixture from melting the mayo.
  5. Prepare Salmon Mixture: In a mixing bowl, combine the diced salmon, mayonnaise, Sriracha sauce, sesame oil, and chopped green onions. Mix well, adjusting the Sriracha for preferred spiciness.
  6. Assemble Bake: Spread the spicy salmon mixture evenly over the rice layer in the baking dish, creating a uniform top layer.
  7. Bake: Place the dish in the preheated oven and bake for 25-30 minutes, until the salmon is cooked through and the top is slightly golden and bubbly.
  8. Garnish: Remove from oven and let cool for a few minutes. Garnish with additional chopped green onions, nori strips, and tobiko if using for added flavor and texture.
  9. Serve: Serve the spicy salmon sushi bake warm. Scoop portions with a spoon and enjoy this delicious fusion dish.

Notes

  • Use fresh sushi-grade salmon for best results and safety when consuming cooked fish in sushi-style dishes.
  • Adjust the amount of Sriracha to modify spiciness according to your preference.
  • Rice vinegar mixture can be warmed slightly to help dissolve sugar and salt faster.
  • Tobiko is optional but adds a crunchy texture and authentic sushi flavor.
  • For a crispier top, broil for 1-2 minutes after baking, watching closely to avoid burning.
  • Leftovers can be refrigerated and reheated gently in the oven or microwave.
