Spicy Honey Lime Chicken is a delicious and flavorful dish that combines the perfect balance of sweet, heat, and citrus. Tender chicken thighs are marinated in a zesty mixture of soy sauce, honey, lime, garlic, and ginger, then grilled to perfection. The result is juicy, caramelized chicken skewers that are sure to be a hit at any barbecue or gathering.

For the Chicken:

  • 2 1/2 pounds (1.13kg) boneless skinless thighs, trimmed and cut into 2 inch/5.1cm pieces

For the Marinade/Sauce:

  • 3 tablespoons soy sauce (low sodium recommended)
  • 6 tablespoons honey or maple syrup
  • 1 teaspoon lime zest (from one lime)
  • 3 tablespoons fresh lime juice (from 1 1/2 to 2 limes)
  • 4 garlic cloves, minced or grated (or 1/2 tsp garlic powder)
  • 1 1/2 tablespoons grated fresh ginger (about 1 1/2 inch of fresh ginger)
  • 1 tablespoon vegetable oil
  • 1 1/2 tablespoons Sriracha sauce
  • 1 1/4 teaspoons kosher salt
  • 1/2 teaspoon cornstarch (optional, for thickening)

Garnish:

  • 2 tablespoons chopped cilantro or parsley
  • Lime wedges

Instructions

  1. MAKE MARINADE/SAUCE: Whisk or blend all marinade ingredients together in a small bowl.
  2. MARINATE CHICKEN: Pour half of the marinade into a bag with chicken. Marinate for 30 minutes at room temperature or 6-12 hours in the fridge. Reserve the other half of the marinade for glazing. Optionally, thicken the reserved marinade with cornstarch.
  3. PREPARE GRILL: Preheat grill to medium-high heat and oil the grates. If using skewers, soak them in water for 30 minutes.
  4. GRILL CHICKEN SKEWERS: Skewer chicken and grill until golden brown, basting with the honey lime glaze. Cook for 9-12 minutes, turning occasionally, until internal temperature reaches 160F/71C.
  5. SERVE: Rest chicken, then drizzle with extra sauce if desired. Garnish with cilantro or parsley and serve with lime wedges.

Notes

  • If marinating overnight, increase lime zest and omit lime juice to prevent ‘cooking’ the chicken.
  • Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
