  • Chicken:

  • 2 tablespoons taco seasoning
  • 2 tablespoons extra-virgin olive oil (divided)
  • Vegetables and Others:

  • 1 small onion, finely diced
  • 3 cloves garlic
  • 1 can (15 oz) black beans, drained & rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) Rotel original diced tomatoes w/ green chilies
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Chopped fresh cilantro (optional garnish)

Instructions

  1. Cook the pasta: Prepare the penne pasta according to package directions. Remember to add salt to the boiling water for flavor.
  2. Season and cook the chicken: Cut chicken into bite-sized pieces, coat with taco seasoning, and cook in olive oil until fully cooked. Set aside.
  3. Sauté onions and garlic: In the same pan, sauté onions and garlic until softened.
  4. Combine ingredients: Add black beans, corn, Rotel tomatoes, cream, and cheddar cheese. Simmer until cheese melts and mixture thickens.
  5. Finish the dish: Return chicken to the skillet, add cooked pasta, and heat through. Garnish with cilantro before serving.
