Souper Rice is a comforting, easy-to-make dish combining creamy soup, chicken broth, and instant rice, topped with Parmesan cheese and a touch of black pepper. This simple recipe requires minimal ingredients and delivers a warm, savory side or light meal perfect for busy days.

Ingredients

Scale

Soup and Broth

  • 1 (10.5-oz) can Unsalted Cream of Chicken Soup (can use 98% fat free)
  • 1½ cups chicken broth

Rice and Cheese

  • 1½ cups uncooked instant white rice
  • ¼ cup grated Parmesan cheese (green can or fresh)

Seasoning

  • Dash freshly ground black pepper

Instructions

  1. Heat soup and broth: In a 2-quart saucepan, combine the cream of chicken soup and chicken broth. Place over medium-high heat and bring the mixture to a boil, stirring occasionally to blend the soup and broth evenly.
  2. Add rice and seasonings: Once boiling, stir in the uncooked instant white rice, grated Parmesan cheese, and freshly ground black pepper. Mix well to combine all ingredients thoroughly.
  3. Cover and let stand: Immediately cover the saucepan with a lid and remove it from heat. Let the mixture stand undisturbed for 5 to 8 minutes, allowing the instant rice to cook fully and absorb most of the liquid, resulting in a creamy, tender dish.

Notes

  • Using instant rice reduces cooking time and eliminates the need for boiling water separately.
  • Adjust the amount of black pepper to taste for preferred seasoning intensity.
  • For a lower-fat option, choose the 98% fat-free cream of chicken soup.
  • Freshly grated Parmesan cheese will provide a richer flavor compared to pre-grated cheese.
  • Ensure the saucepan is covered tightly to trap steam needed for cooking the rice properly.
