Ingredients

Scale

Wet Ingredients

  • 150 ml milk (lukewarm)
  • 70 ml water (lukewarm)
  • 7 g instant yeast
  • 12 g honey
  • 30 g unsalted butter (room temperature)

Dry Ingredients

  • 400 g all-purpose flour
  • 7 g salt

Instructions

  1. Activate Yeast: Stir the instant yeast into the lukewarm milk, lukewarm water, and honey mixture. Let it rest until it becomes foamy, indicating that the yeast is active, about 5-10 minutes.
  2. Make Dough: Add the all-purpose flour, salt, and room temperature unsalted butter to the yeast mixture. Knead the dough thoroughly until it is smooth and elastic, which typically takes about 8-10 minutes by hand or 5-7 minutes with a stand mixer.
  3. First Rise: Cover the dough and let it rise in a warm place until it doubles in size, approximately 1 to 1.5 hours.
  4. Shape Buns: Punch down the risen dough and divide it into 10 equal pieces. Shape each piece into a smooth ball. At this stage, you can optionally fill the buns with your favorite filling before shaping.
  5. Second Rise: Place the shaped buns on a tray and let them rest for 30 to 40 minutes until they become puffy and slightly risen.
  6. Fry the Buns: Heat oil in a deep pan or fryer to 175°C (350°F). Fry the buns in small batches until they turn golden brown on all sides, usually taking 3-4 minutes per batch. Ensure not to overcrowd the pan for even cooking.
  7. Drain and Serve: Remove the buns with a slotted spoon and drain on paper towels to remove excess oil. Serve them plain, dusted with sugar, or filled as desired while warm.

Notes

  • Use lukewarm liquids to properly activate the yeast without killing it.
  • Kneading the dough well is essential to develop gluten for a soft texture.
  • Ensure the oil temperature stays consistent to avoid greasy or undercooked buns.
  • These buns are best enjoyed fresh but can be reheated gently.
  • Optional fillings can include sweet red bean paste, custard, or savory fillings like minced pork.
