  • 2 tablespoons olive oil

  • 1 teaspoon onion powder

Smothered Sauce:

  • 1 medium onion, thinly sliced
  • 3 cloves garlic, minced
  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 cup chicken broth
  • ½ cup heavy cream
  • ½ teaspoon thyme (fresh or dried)

Scalloped Potatoes:

  • 2 pounds Yukon gold or russet potatoes, thinly sliced
  • 1½ cups shredded mozzarella or Gruyère cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven: Preheat the oven to 375°F (190°C).
  2. Season pork chops: Season the pork chops with salt, pepper, garlic powder, onion powder, and paprika on both sides.
  3. Sear pork chops: Heat olive oil in a large oven-safe skillet. Sear the pork chops for 2–3 minutes per side until golden. Set aside.
  4. Make sauce: In the same skillet, cook onions in butter until caramelized. Add garlic, then whisk in flour and gradually add milk, broth, and cream. Season with thyme, salt, and pepper.
  5. Layer potatoes: Arrange half of the sliced potatoes in the skillet, pour half the sauce, and sprinkle half the cheese. Repeat with remaining potatoes, sauce, and cheese.
  6. Bake: Place seared pork chops on top, cover with foil, and bake for 45 minutes. Remove foil and bake an additional 20–25 minutes until golden.
  7. Serve: Let it rest for 10 minutes before garnishing with parsley and serving.
