For the Crust:

  • ½ cup salted butter, melted
  • 2 cups graham cracker crumbs (made from 1 1/2 packages of graham crackers)

For the Cookie Layer:

  • 1 cup granulated sugar
  • 1 ¼ cups brown sugar, packed
  • ¾ cup unsalted butter, melted
  • 3 large eggs, room temperature
  • 1 ½ teaspoons vanilla extract
  • 3 cups all-purpose flour, spooned and leveled
  • 2 ½ teaspoons baking powder
  • 1 teaspoon fine sea salt (reduce to 1/2 teaspoon if using salted butter)
  • 1 cup semi-sweet chocolate chips
  • 1 cup mini marshmallows

For Toppings:

  • 12 Hershey chocolate bars (each section broken or cut in half)
  • 1 graham cracker, broken into pieces
  • ½ cup mini marshmallows

Instructions

  1. Preheat the oven: Preheat the oven to 325°F and line a 9″x13″ baking pan with parchment paper, leaving some paper hanging over the sides.
  2. Make the Crust: Combine melted butter with graham cracker crumbs, press into the bottom of the pan, and freeze.
  3. Prepare the Cookie Layer: Blend sugars and melted butter, add eggs and vanilla. Mix in flour, baking powder, salt, then fold in marshmallows and chocolate chips.
  4. Assemble: Spread the cookie dough over the crust in the pan, top with marshmallows, chocolate bars, graham cracker pieces, and more marshmallows.
  5. Bake: Bake for 35-45 minutes until golden brown and set.
  6. Cool and Serve: Cool completely before cutting into bars.

Notes

  • For easier cutting, chill the bars in the fridge before slicing.
  • Store leftovers in an airtight container at room temperature for up to 3 days.
