Ingredients

Scale

Chicken

  • 1 lb chicken breasts
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 2 tbsp minced garlic
  • Buffalo Wild Wings Garlic Parmesan Sauce (enough to coat chicken, approx. 1/3 to 1/2 cup)

Potatoes

  • 5 medium-sized potatoes, chopped into bite-sized pieces
  • 2 tbsp olive oil
  • Salt, to taste (approx. 1/2 tsp)
  • Black pepper, to taste (approx. 1/2 tsp)
  • 1 tsp paprika
  • 1 tsp garlic powder

Topping

  • 1 cup shredded mozzarella cheese

Instructions

  1. Prepare Potatoes: Wash and chop the potatoes into bite-sized pieces. In a bowl, toss them with olive oil, salt, pepper, garlic powder, and paprika until evenly coated.
  2. Layer Potatoes in Slow Cooker: Place the seasoned potatoes in the bottom of a slow cooker, spreading them out evenly to create a base layer.
  3. Season Chicken: Season the chicken breasts on both sides with salt, pepper, paprika, onion powder, and Italian seasoning to build flavor.
  4. Assemble in Slow Cooker: Lay the seasoned chicken breasts directly on top of the potatoes in the slow cooker. Spread the minced garlic evenly over the chicken breasts.
  5. Add Sauce: Pour enough Buffalo Wild Wings Garlic Parmesan Sauce over the chicken to thoroughly coat it, infusing it with rich garlicky flavor.
  6. Cook: Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the chicken is cooked through and the potatoes are tender when pierced with a fork.
  7. Add Cheese: In the final 30 minutes of cooking, sprinkle the shredded mozzarella cheese over the top. Cover and allow it to melt completely, creating a creamy cheese topping.
  8. Serve: Serve warm, garnished with extra Parmesan cheese or fresh herbs if desired for added flavor and presentation.

Notes

  • Feel free to substitute the Buffalo Wild Wings Garlic Parmesan Sauce with any garlic parmesan sauce or make your own.
  • Medium potatoes such as Yukon Gold or red potatoes work best as they hold shape while becoming tender.
  • Adding the cheese at the end prevents it from overcooking and ensures a melty texture.
  • You can add fresh herbs like parsley or basil as garnish to brighten flavors.
  • Check seasoning after cooking and adjust salt or pepper as needed before serving.
