  • 4 russet potatoes, peeled and cut into bite-sized pieces
  • 1 cup diced bell pepper (red or green)
  • 1 cup diced onion
  • ½ cup diced celery
  • ½ cup sliced carrots
  • 1 tablespoon minced garlic
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 3 cups chicken broth
  • 1 cup milk
  • ½ cup whipping cream
  • 1 cup shredded cheddar cheese
  • Green onions, sliced for serving
  • Tabasco sauce, for serving

Instructions

  1. Brown the Sausage: Heat the olive oil in a skillet over medium heat. Add the sliced sausage and brown on both sides for about 3-4 minutes per side. Transfer to a plate lined with paper towels to drain any excess grease.
  2. Add Ingredients to Slow Cooker: In a slow cooker, combine the browned sausage, potatoes, bell pepper, onion, celery, carrots, minced garlic, Cajun seasoning, salt, and black pepper.
  3. Add Broth and Cook: Pour the chicken broth over the sausage and vegetables, stirring well to combine. Cover and cook on high for 3 hours or low for 5 hours, until the potatoes are tender.
  4. Add Milk: After the initial cooking time, stir in the milk. Cover and cook for an additional 1 hour on low.
