Instructions

  1. Rinse Quinoa: Rinse the quinoa thoroughly under cold running water using a fine mesh strainer to remove any bitterness caused by saponins.
  2. Cook Quinoa: Transfer the rinsed quinoa, water, vegetable broth, and curry powder to a medium saucepan. Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the quinoa is tender and all liquid has been absorbed.
  3. Steam Rest: Turn off the heat but keep the lid on. Let the quinoa sit covered for an additional 5 minutes to finish steaming and ensure fluffiness.
  4. Fluff and Mix: Fluff the quinoa gently with a fork and transfer it to a large mixing bowl. Add the lemon juice, red wine vinegar, olive oil, chopped herbs, golden raisins, drained chickpeas, slivered almonds, sea salt, and ground black pepper. Toss everything together until well combined.
