Sicilian Whole Orange Cake Recipe

Cake:
- 3 eggs
- 1 ⅛ cups sugar
- 2 cups all-purpose flour
- 2 ½ tsp baking powder (OR 1 packet Italian Pane Degli Angeli vanilla baking powder)
- ⅓ cup butter (salted, softened)
- ⅓ cup Greek yogurt (plain, or sour cream)
- 1 large orange (washed, cut into pieces)
- 1 tsp vanilla extract (if using plain baking powder)
Orange Glaze:
- 2 ½ oz orange juice (freshly squeezed)
- 3 tbsp sugar
- Preheat oven: Preheat oven to 350°F (175°C).
- Prepare pan: Grease and line an 8″ springform pan with parchment paper.
- Mix batter: Beat sugar and eggs until fluffy. Sift flour and baking powder, add to the mixture with butter. Stir in yogurt. Process whole orange in a food processor and add to the mixture. Add vanilla if using plain baking powder. Pour batter into pan.
- Bake: Bake for 50-60 minutes. Test with a cake tester. Cool before removing from pan.
- Make glaze: Melt sugar in orange juice until syrupy. Brush over cooled cake.
