Ingredients

Scale

Chicken and Marinade

  • 4 medium boneless skinless chicken breasts
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon Italian seasoning (optional)
  • 1/2 teaspoon salt
  • 1/2 teaspoon fresh cracked pepper

Casserole Toppings

  • 8 oz cream cheese, softened
  • 1 cup salsa verde
  • 4 oz mozzarella cheese, shredded

Instructions

  1. Prepare the Marinade: Add olive oil, garlic powder, Italian seasoning, salt, pepper, and red pepper flakes into a Ziplock bag. Seal the bag and shake to mix the ingredients thoroughly, forming the marinade.
  2. Marinate the Chicken: Place the chicken breasts inside the marinade bag, seal it, and massage the marinade over the chicken to coat evenly. Alternatively, season the chicken breasts on a shallow plate ensuring full coverage with the spices.
  3. Preheat the Oven: Position a rack in the center of the oven and preheat it to 400ºF (200ºC).
  4. Arrange Chicken in Baking Dish: Remove chicken breasts from the marinade, allowing excess to drip off, and place them evenly spaced in a baking dish.
  5. Add Cream Cheese Layer: Spread the softened cream cheese evenly over each chicken breast. Season with additional salt, pepper, and optional spices if desired for enhanced flavor.
  6. Add Salsa Verde and Mozzarella: Pour the salsa verde sauce evenly over the cream cheese layer, then sprinkle shredded mozzarella cheese liberally on top to cover the casserole.
  7. Bake the Casserole: Place the baking dish in the preheated oven and bake for 20-30 minutes, or until the chicken is cooked through to an internal temperature of 165ºF (75ºC) and the cheese is melted and bubbly.
  8. Serve: Remove from oven and let rest briefly. Serve the salsa verde chicken casserole warm, ideally paired with cauliflower rice or baked vegetables for a complete meal.

Notes

  • Make sure the cream cheese is softened at room temperature for easy spreading.
  • Adjust the amount of red pepper flakes according to your preferred spice level.
  • Check the internal temperature of the chicken with a meat thermometer to ensure it reaches 165ºF for safe consumption.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • For a low-carb option, serve with cauliflower rice or steamed veggies instead of traditional grains.
