Potatoes:

  • 12 large baking potatoes, washed and cubed

Feta and Seasonings:

  • 7 oz (200 g) block of feta cheese
  • 2 tablespoons olive oil, divided
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Garlic and Garnish:

  • 1 head of garlic, top sliced off
  • 1 lemon, quartered
  • 1 tablespoon honey
  • 1/4 cup (20 g) fresh basil, chopped

Instructions

  1. Preheat and Prepare: Preheat the oven to 390°F (200°C). Wash and cube the potatoes, then place them in a baking dish.
  2. Season the Potatoes: Drizzle 1 tablespoon of olive oil over the potatoes. Sprinkle with dried thyme, oregano, salt, and pepper. Toss to coat evenly.
  3. Add the Feta and Garlic: Place the feta block in the center of the dish. Press one side of the feta into the seasonings on the potatoes. Add the garlic head and half the lemon wedges to the dish. Drizzle remaining olive oil over everything.
  4. Bake to Perfection: Roast for 45-55 minutes until potatoes are crispy and golden. Remove garlic if browning too much after about 35 minutes.
  5. Mash and Mix: Squeeze roasted garlic cloves out of skins, mash into a paste. Add garlic paste, lemon juice, and basil to the dish. Gently mix potatoes and feta.
  6. Finishing Touch: Drizzle honey over the top, sprinkle with fresh basil.
  7. Serve and Enjoy: Serve hot and enjoy the flavorful combination of roasted potatoes, baked feta, and garlic.
