  • ½ cup plain yogurt or Greek yogurt
  • 1 cup granulated sugar
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • ¼ teaspoon almond extract
  • 1½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup neutral flavored oil (e.g., canola, vegetable, sunflower, safflower, avocado, or grapeseed)

For the Glaze:

  • ⅓ cup granulated sugar
  • 3 tablespoons butter (salted)
  • 1½ tablespoons water
  • 1 teaspoon vanilla extract
  • ⅛ teaspoon almond extract

Instructions

  1. Prepare the Pan – Preheat the oven to 350°F (175°C). Spray an 8-inch round cake pan with baking spray, line the bottom with parchment paper, and set it aside.
  2. Mix Wet Ingredients – In a large bowl, whisk together yogurt, sugar, eggs, vanilla extract, and almond extract until well blended.
  3. Add Dry Ingredients – Whisk in baking powder, salt, and flour until incorporated.
  4. Incorporate Oil – Stir in the oil until the mixture is smooth.
  5. Bake the Cake – Pour the batter into the pan and bake for 30-40 minutes until a toothpick comes out clean.
