Cookie Dough:
- ½ cup butter
- ½ cups packed brown sugar
- ¼ cup granulated sugar
- 2 tablespoons turbinado sugar
- 1 large egg
- 1 teaspoon vanilla
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup all-purpose flour
- 1 cup oats (pulsed in the blender)
- 1 cup rice krispie cereal
- 2.7 ounces nestle crunch bar (chopped)
- ¾ cup semi sweet chocolate chips
- flaked sea salt for sprinkling
- Preheat the oven: Preheat the oven to 350°F. Line 2 baking sheets with parchment paper and set aside.
- Mix butter and sugar: Place the butter and sugars in a stand mixer fitted with a paddle attachment. Beat on medium-high speed until light and fluffy, 3 to 4 minutes. Add in egg and vanilla and mix together until combined.
- Prepare oats: Place oats in a blender or food processor and pulse a few times so you have some oat flour and some thicker pieces of oats. (Can also chop with a knife if needed)
- Combine dry ingredients: Add in baking soda, salt, flour, oats and mix until combined.
- Add chocolate and cereal: Fold in rice krispies and both kinds of chocolate.
- Scoop dough: Scoop the dough into large balls using a ¼ cup cookie or ice cream scoop. Top cookie dough with additional chocolate and flaked salt.
- Bake: Bake the cookies for 11-13 minutes. Sprinkle with a little extra salt if desired.
