  • 1/2 cup butter, softened
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 tbsp lemon juice
  • 1/4 tsp salt
  • Zest of 1/2 lemon
  • 3/4 cup all-purpose flour
  • 3/41 cup fresh raspberries

For the Glaze:

  • 1 cup powdered sugar
  • 1 tbsp seedless raspberry jam
  • 1 tbsp lemon juice
  • Zest of 1/2 lemon

Instructions

  1. Preheat oven and prepare pan: Preheat oven to 350 degrees. Prepare an 8×8 square pan by spraying it with non-stick spray or lining it with parchment paper.
  2. Mix the batter: In a large bowl, combine butter, sugar, eggs, lemon juice, salt, and lemon zest. Mix until just combined. Add flour and stir until smooth. Gently fold in fresh raspberries.
  3. Bake: Pour the batter into the prepared pan and spread it evenly. Bake for about 25 minutes until the edges are golden brown and the center is set. Do not overbake.
