For the Bars:
- 1/2 cup butter, softened
- 3/4 cup granulated sugar
- 2 eggs
- 1 tbsp lemon juice
- 1/4 tsp salt
- Zest of 1/2 lemon
- 3/4 cup all-purpose flour
- 3/4–1 cup fresh raspberries
For the Glaze:
- 1 cup powdered sugar
- 1 tbsp seedless raspberry jam
- 1 tbsp lemon juice
- Zest of 1/2 lemon
- Preheat oven and prepare pan: Preheat oven to 350 degrees. Prepare an 8×8 square pan by spraying it with non-stick spray or lining it with parchment paper.
- Mix the batter: In a large bowl, combine butter, sugar, eggs, lemon juice, salt, and lemon zest. Mix until just combined. Add flour and stir until smooth. Gently fold in fresh raspberries.
- Bake: Pour the batter into the prepared pan and spread it evenly. Bake for about 25 minutes until the edges are golden brown and the center is set. Do not overbake.
- Prepare the glaze: While the bars are cooling, mix powdered sugar, raspberry jam, lemon juice, and lemon zest in a bowl until smooth.
