This Ramen Noodle Salad is a delicious and easy-to-make dish that combines crunchy veggies, flavorful dressing, and the unique addition of ramen noodles for a satisfying meal or side.

Ingredients

Sliced Almonds:

1/4 cup

Olive Oil:

1/2 cup

Rice Vinegar:

1/4 cup

Soy Sauce:

3 Tablespoons

Sugar:

1/2 cup

Prepackaged Cole Slaw Mix:

1 14 ounce package

Prepackaged Broccoli Slaw Mix:

1 12 ounce package

Ramen Noodles:

2 packages (beef or soy sauce flavor)

Sesame Seeds, Sunflower Seeds, or Chopped Peanuts:

1/4 cup

Instructions

  1. Preheat oven to 300°F: Place almonds on a baking sheet, bake for 8 minutes until fragrant, then set aside.
  2. Make Dressing: Combine olive oil, vinegar, soy sauce, and sugar in a bowl, whisk until sugar dissolves, and set aside.
  3. Mix Slaw: In a large bowl, combine broccoli slaw and coleslaw.
  4. Prepare Noodles: Break ramen noodles into small pieces, open packages and add to slaw mix (reserving seasoning packets).
  5. Add Almonds & Seeds: Mix cooled almonds and seeds into slaw mix.
  6. Prepare Dressing: Pour ramen seasoning packets into the dressing, mix well.
  7. Combine: Pour dressing over slaw mix, mix thoroughly.
  8. Chill: Refrigerate for 3 hours or overnight.
  9. Serve: Serve chilled.
