Ingredients

Scale

Chocolate Chip Protein Cookie Dough

  • 1 cup whole wheat flour (heat treated)
  • ½ cup vanilla protein powder
  • ⅓ cup pure maple syrup
  • 2 tbsp coconut oil, melted
  • 24 tbsp milk of choice
  • 1 tsp vanilla extract
  • ½ cup mini chocolate chips

Chocolate Protein Cookie Dough

  • ¾ cup whole wheat flour (heat treated)
  • ¼ cup unsweetened cocoa powder
  • ½ cup chocolate protein powder
  • ⅓ cup pure maple syrup
  • 2 tbsp coconut oil, melted
  • 24 tbsp milk of choice
  • 1 tsp vanilla extract
  • ½ cup mini chocolate chips

Funfetti Protein Cookie Dough

  • 1 cup whole wheat flour (heat treated)
  • ½ cup vanilla protein powder
  • ⅓ cup pure maple syrup
  • 2 tbsp coconut oil, melted
  • 24 tbsp milk of choice
  • 2 tsp vanilla extract
  • ¼ cup rainbow sprinkles

Instructions

  1. Heat the Flour: In a microwave-safe bowl, heat the whole wheat flour for 60-90 seconds on high, then stir. Heat for an additional 30 seconds until the temperature reaches 165°F, which ensures any potential bacteria are eliminated. Transfer the warmed flour to a large mixing bowl.
  2. Combine Dry Ingredients: Add the protein powder (and cocoa powder if making the chocolate flavor) to the flour. Stir well to evenly distribute all dry ingredients.
  3. Add Wet Ingredients: Pour in the pure maple syrup, melted coconut oil, 2 tablespoons of your preferred milk, and vanilla extract. Stir until the mixture begins to come together. If the dough feels too dry, gradually add 1-2 more tablespoons of milk until the desired consistency is reached.
  4. Mix in Add-ins: Fold in either mini chocolate chips for the chocolate chip or chocolate versions, or rainbow sprinkles for the funfetti version. Mix until they are evenly incorporated throughout the dough.
  5. Store Properly: Place the dough in an airtight container and refrigerate for 4-5 days. Keep in mind that the dough will harden in the fridge, so allow it to come to room temperature before eating for easier handling. Alternatively, portion out servings before refrigerating for convenient grab-and-go treats.

Notes

  • The flour must be heat treated by microwaving to make this dough safe to eat raw by killing any bacteria.
  • If the dough is too dry, milk can be added gradually to reach a soft, pliable texture.
  • Storing the dough in the fridge causes it to harden; bring to room temperature before consuming.
  • Individual portions can be pre-made and refrigerated for easy snacks.
  • Use your preferred milk such as almond, oat, cow’s milk, or any other to customize flavor and dietary needs.
  • These recipes are naturally sweetened with pure maple syrup and contain no added refined sugars.
