  1. Melt cheese base: In a non-stick frying pan over medium heat, sprinkle half the grated cheese evenly across the pan. Allow it to melt and slightly crisp to form a flavorful base.
  2. Whisk eggs: While the cheese is melting, crack the eggs into a bowl and whisk them until the mixture is smooth and combined.
  3. Cook eggs: Pour the whisked eggs over the melted cheese in the pan. Cover with a lid and cook until the bottom is firm and golden, ensuring the eggs set properly.
  4. Flip: Carefully flip the egg and cheese base using a spatula, being gentle to avoid breaking the base.
  5. Add toppings: Spread the passata evenly on top of the cooked side, add the salami slices and sprinkle with the remaining grated cheese. Cover the pan again and cook until the cheese melts and the toppings are heated through.
  6. Serve: Remove the pizza eggs from the pan, sprinkle with mixed herbs, and serve immediately while hot.
