Instructions

  1. Preheat and Brown Beef: Preheat your oven to 350°F (175°C). In a large skillet, heat the olive oil over medium-high heat and add the lean ground beef. Cook it until browned, breaking it apart as it cooks.
  2. Sauté Vegetables: Add the diced onion, red bell pepper, green bell pepper, and minced garlic to the skillet with the beef. Sauté everything together until the vegetables are softened, about 5 minutes.
  3. Add Seasonings: Stir in the Italian seasoning, Worcestershire sauce, salt, and black pepper. Mix thoroughly to combine all the flavors.
  4. Combine Tomatoes, Rice, and Broth: Pour in the canned diced tomatoes (with their juice), the uncooked rice, and the beef broth. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 20 minutes, allowing the rice to cook and absorb the liquid.
  5. Transfer and Top: Grease a 9×13 inch baking dish and transfer the cooked mixture into it evenly. Sprinkle the shredded cheddar or mozzarella cheese evenly over the top.
  6. Bake: Place the baking dish in your preheated oven and bake for 25 minutes until the casserole is bubbly and the cheese is nicely melted and slightly golden.
  7. Rest and Garnish: Remove the casserole from the oven and let it rest for 5 minutes. Garnish with chopped fresh parsley before serving.
