2 cups all-purpose flour
¼ teaspoon salt
For the lemon filling:
4 large eggs
1 ½ cups granulated sugar
¼ cup all-purpose flour
1 cup freshly squeezed lemon juice (about 4–5 lemons)
Zest of 2 lemons
Powdered sugar, for dusting (optional)
Instructions
Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan with butter or cooking spray.
Make the Crust:
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
Gradually add in the flour and salt, mixing until combined. The mixture should resemble coarse crumbs.
Press the Crust:
Press the crust mixture evenly into the bottom of the prepared pan. Use your hands or the back of a measuring cup for an even layer.
Bake the Crust:
Bake in the preheated oven for 15-20 minutes or until lightly golden. Remove from the oven and allow to cool slightly.
Prepare the Filling:
In a separate bowl, beat the 4 eggs until frothy.
Add the granulated sugar, flour, lemon juice, and lemon zest. Whisk until smooth.

Bake Again:
