For the marinade:

  • 1 pound beef steak (such as sirloin, flank, or ribeye), thinly sliced against the grain
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon cornstarch

For the stir-fry:

  • 2 tablespoons vegetable oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1/4 cup beef broth or water
  • Salt and pepper to taste

Instructions

  1. Marinate the beef: In a bowl, combine soy sauce, oyster sauce, and cornstarch. Add beef slices, coat well, and marinate for at least 15 minutes.
  2. Sear the beef: Heat 1 tablespoon of oil in a skillet over high heat. Sear beef slices for 1-2 minutes per side until browned. Set aside.
  3. Stir-fry the vegetables: In the same skillet, add remaining oil. Sauté bell peppers and onion for 3-4 minutes until tender-crisp.
  4. Add aromatics: Add garlic and ginger, sauté for 1 minute until fragrant.
  5. Combine and cook: Return beef to skillet, add broth/water, stir well, and cook for 2-3 minutes until slightly thickened.
  6. Season and serve: Season with salt and pepper, then serve hot over rice or noodles.
