Ingredients

Scale

Cabbage & Vegetable

  • 1 small head green cabbage
  • 1 medium Vidalia onion, chopped

Butter & Seasoning

  • 8 tablespoons butter
  • Salt and pepper, to taste

Sauce

  • 1 (10-ounce) can condensed cream of chicken or cream of mushroom soup
  • 1/3 cup mayonnaise

Topping

  • 3 tablespoons melted butter
  • 1 cup shredded sharp cheddar cheese
  • 1 sleeve Ritz crackers (about 30), coarsely crushed

Instructions

  1. Preheat and prepare dish: Preheat your oven to 350 degrees F. Lightly grease a 2-quart casserole dish to prevent sticking and set aside.
  2. Cook cabbage mixture: Coarsely chop the green cabbage. Melt 8 tablespoons of butter in a large nonstick pan over medium heat. Add the chopped cabbage and Vidalia onion, cooking for 8 to 10 minutes. Stir frequently until the cabbage is partially cooked down and softened. Season the mixture well with salt and pepper to taste.
  3. Assemble cabbage layer: Transfer the cooked cabbage and onion mixture into the prepared casserole dish, spreading it out evenly.
  4. Prepare sauce: In a small bowl, mix together the condensed cream of chicken or mushroom soup with 1/3 cup of mayonnaise until well combined. Spread this creamy mixture evenly over the cabbage layer in the casserole dish.
  5. Prepare topping: In another bowl, combine the melted butter, shredded sharp cheddar cheese, and coarsely crushed Ritz crackers. Mix together until evenly incorporated. Sprinkle this topping mixture evenly over the casserole.
  6. Bake: Place the casserole dish in the preheated oven and bake uncovered for 30 minutes, or until the topping is golden brown and crisp. Once baked, remove from the oven and let it cool slightly before serving.

Notes

  • You can use either cream of chicken or cream of mushroom soup depending on your preference or dietary needs.
  • For a vegetarian option, use cream of mushroom soup and omit any chicken-based ingredients.
  • Make sure to coarsely crush the Ritz crackers to keep the topping crispy and not too fine.
  • This casserole can be prepared ahead of time and refrigerated before baking; just add a few extra minutes to the baking time if baking from cold.
  • Substitute sharp cheddar with any cheese of your choice to adjust flavor intensity.
