Ingredients

Scale

Crispy Chocolate Bottom and Top Layer

  • 12 ounces semi-sweet chocolate chips (divided)
  • 11 ounces butterscotch chips (divided)
  • 1 cup creamy peanut butter (divided)
  • 3 cups Cocoa Pebbles (divided)

Nougat Layer

  • ¼ cup unsalted butter
  • 1 cup granulated sugar
  • ¼ cup evaporated milk
  • 7 ounces marshmallow creme
  • ¼ cup creamy peanut butter
  • 1 ½ cups roasted, lightly salted peanuts, coarsely chopped
  • 1 teaspoon vanilla extract

Caramel Layer

  • 11 ounces bag KRAFT caramels or caramel bits
  • ¼ cup evaporated milk

Instructions

  1. Prepare baking dish: Spray a 9×13 inch baking dish with cooking spray and line it with parchment paper. Set aside for assembling the bars.
  2. Melt chocolate, butterscotch, and peanut butter for bottom layer: Combine half the semi-sweet chocolate chips, half the butterscotch chips, and half the peanut butter in a large microwave-safe container. Microwave on high in 30-second intervals, stirring between each, until fully melted and smooth.
  3. Mix in Cocoa Pebbles and set base layer: Stir in half of the Cocoa Pebbles cereal until they are fully coated with the melted mixture. Pour this mixture evenly into the prepared baking dish. Refrigerate until firm, about 15 minutes.
  4. Make nougat layer base: In a small saucepan over medium heat, combine unsalted butter, granulated sugar, and evaporated milk. Stir continuously until the butter melts and sugar dissolves.
  5. Cook nougat mixture: Bring the mixture to a boil and let it cook for 5 more minutes, stirring frequently. Remove from heat once done.
  6. Add marshmallow creme, peanut butter, vanilla, and peanuts: Stir in the marshmallow creme until fully incorporated, then blend in the remaining peanut butter and vanilla extract. Fold in the coarsely chopped roasted peanuts.
  7. Layer nougat and chill: Pour the nougat mixture over the chilled chocolate bottom layer. Refrigerate for about 15 minutes until firm.
  8. Melt caramels: In a microwave-safe container, combine unwrapped caramels with evaporated milk. Microwave on high for 1 minute, stir, then continue microwaving in 30-second bursts until the caramel is melted fully and smooth.
  9. Spread caramel layer and chill: Spread the melted caramel evenly over the chilled nougat layer. Refrigerate for 15 minutes to set.
  10. Prepare crispy chocolate top layer: Repeat the melting process with the remaining chocolate chips, butterscotch chips, and peanut butter. Microwave in 30-second intervals stirring until smooth.
  11. Add remaining Cocoa Pebbles and top off: Stir in the remaining Cocoa Pebbles until fully coated and pour the mixture over the set caramel layer. Refrigerate for approximately 30 minutes until firm.
  12. Serve: Keep the bars refrigerated until ready to eat. Cut into squares and serve chilled for best texture and flavor.

Notes

  • This recipe requires refrigeration between layers to ensure each sets properly before adding the next.
  • Use parchment paper to easily lift the bars out of the pan for cutting and serving.
  • Lightly salted roasted peanuts add a nice contrast of flavor, but you can adjust salt levels according to preference.
  • Microwave times can vary depending on power; stir frequently to avoid burning chocolate and caramel.
  • Store leftover bars tightly covered in the refrigerator for up to one week.
