For the Chicken:

  • 2 medium chicken breasts

  • 1 tablespoon hot sauce
  • ½ cup all-purpose flour
  • ½ cup cornstarch (or more flour)
  • 1 teaspoon EACH cayenne, garlic powder, salt, black pepper
  • ½ cup frying oil (or melted butter)

For the Nashville Hot Sauce:

  • 1 tablespoon brown sugar
  • 1 tablespoon cayenne powder
  • ½ teaspoon EACH chili powder, smoked paprika, garlic powder

For Serving:

  • 4 burger buns (buttered and toasted)
  • coleslaw
  • mayonnaise
  • pickles

Instructions

  1. Prep the Chicken: Slice the chicken breasts in half horizontally to make 4 thin cutlets. Season each side of the chicken with salt & pepper. Whisk buttermilk and hot sauce in a small shallow bowl. In another shallow bowl, combine the flour, cornstarch, and spices.
  2. Bread the Chicken: Dredge the chicken in flour, shaking off excess, then dip in buttermilk, and back into the flour, pressing firmly to coat both sides of the chicken. Shake off excess flour to create small crumbs for crunchiness.
  3. Fry the Chicken: Heat oil in a large pan to 350ºF. Cook chicken for 3 minutes per side until crispy and cooked through. Transfer to a rack.
  4. Make the Nashville Hot Sauce: Combine hot oil, sugar, and spices. Baste chicken with the hot oil mixture.
  5. Assemble the Sandwiches: Spread mayo on bun, add chicken, coleslaw, pickles. Serve.
